Chip Muffins
Hello Friends,
I was at the breakfast table
one morning and was having a bowl
of cereal and thought what a great
topic for the Pinecone.
Here are some interesting
facts  you may enjoy:
Cereal-based food products
have been the basis of the human
diet since ancient times. Dietary
guidelines all over the world
are recommending the inclusion
of whole grains because of the
increasing evidence that whole
grains and whole-grain-based
products have the ability to enhance
health beyond the simple provision
of energy and nutrients.
In this review we will
examine the main chemical
components present in whole grains
that may have health enhancing
properties (dietary fiber, inulin,
beta-glucan,
resistant
starch,
carotenoids, phenolics, tocotrienols,
and tocopherols) and the role that
whole grains may play in disease
prevention (cardiovascular diseases
and strokes, hypertension, metabolic
syndrome, type 2 diabetes mellitus,
obesity, as well as different forms of
cancer).
The knowledge derived
from the functional properties of
the different chemical components
present in whole grains will aid in
the formulation and development
of new food products with health
enhancing characteristics.
It’s hard to find a good-
tasting, healthy whole grain muffin
at the bakery. So I created this
recipe myself. Made with a mixture
of whole wheat pastry flour, all-
purpose flour and natural bran, these
whole grain chocolate chip muffins
are healthy, but still taste great.
I like to use dark chocolate
chips for these muffins (I think the
Ghirardelli chocolate chips are nice,
because they’re nice and fat!), but
feel free to use your favorite kind.
What you need:
• 1-1/2
cups whole wheat
pastry flour
• 1
cup unbleached all-purpose flour
• 1/2
cup natural bran
• 1
Tbsp. baking powder
• 1/3
cup light brown sugar
• 1/4
tsp. kosher salt
• 1
cup dark or semisweet
chocolate chips
• 1/2
cup canola oil
• 1/2
cup milk (low-fat is okay)
• 1/3
cup honey
• 1
egg
What you do:
1.
Preheat oven to 400 degrees F.
Line a muffin tin with paper cups or
spray with cooking spray.

In a large bowl, whisk flours,
bran, baking powder, brown
sugar and salt together. Stir in the
chocolate chips.
3.
In a separate bowl, beat the
oil, milk, honey and egg together
thoroughly. Pour wet ingredients
into dry andmix just until combined.
Do not over mix.
4.
Fill muffin cups 3/4 of the way
with the muffin batter. Bake the
muffins 15-20 minutes or until
golden brown on top. Let cool and

Yield: 12 muffins
